Topaz

Topaz apples are winter apples and are harvested between the end of September and mid-October. They are fully ripe for consumption from the beginning of November to the beginning of March. Topaz apples are light yellow and almost completely covered in a ruby-red and orange blush, with the yellow base colour only slightly emerging on the stem. Its skin is also often speckled with faint white lenticels. The juicy inner flesh is creamy white and has a firm and crunchy texture.

When first picked, its flavour is sweet and tart with spicy nuances, a taste that mellows with storage. Topaz apples are very versatile in their use as dessert and storage apples. They can be used in a variety of cooked dishes, both sweet and savoury. They can be sliced, roasted, boiled down to a puree or baked in a variety of preparations. The sweet and sour taste of the Topaz apple goes perfectly with sausage, cold meats, strong cheeses, sage, shallots and winter squash.
